Inferno 22
The Inferno 22 is an efficient steam generator designed to provide consistent heat and humidity to dough fermentation chambers, crafted nearly entirely from food-grade stainless steel for durability.
Humidification is a process of elevating the water vapour present in the atmosphere. The aspect of climate control is crucial to many industrial processes, and baking is no exception. Dough humidification is the key for optimal output on product surfaces, consistency, and freshness in bakery craft. High humidity level (water vapour saturation) for difficult products like Kaak and mini baguettes, which are popular in the Middle East and Africa, is always a challenge for homogeneously proofed products. Yet, with such a harsh environment, steam generators don’t last long due to heat and water quality, hence frequent and expensive repairs are inevitable.
Inferno 22 is a steam generator that provides heat and relative humidity to dough fermentation chambers in bakeries. This model is a fourth-generation design, conceived in-house pushing forward with better efficiency on both levels—durability and simplicity of operation.
Inferno 22 steam generator is fitted inside the proofing chamber and is made almost entirely from food-grade stainless steel. Hence, it will last a long time with continuous use, even under elevated heat and poor water quality. It works in conjunction with an electric control panel that is fitted outside the proofing chamber. With large-capacity fermentation chambers, multiple humidifiers can be fitted with auxiliary fan-assisted ducting. The Inferno 22 is smart, simple, and very easy to maintain.
